2 1/2 cups uncooked elbow macaroni
1/2 cup Earth Balance margarine
1/2 cup all-purpose flour
1 quart unsweetened soy milk
2 1/2 cups grated cheddar soy cheese
2 Tablespoons Dijon mustard, divided
1 cup panko crumbs or whole wheat bread crumbs

Cook the macaroni al dente. Drain and set aside in the pot. Preheat oven to 325 degrees.

In a large, heavy saucepan, melt the margarine over medium heat. Stir in the flour and cook, stirring, about 1 minute. Slowly whisk in the soy milk and continue whisking until the mixture begins to thicken. Stir in the soy cheese and 1 Tablespoon mustard. Continue stirring until the cheese melts and is well-incorporated. Season with salt. Remove from the heat and combine the sauce with the macaroni, mixing well.

Transfer the mixture to a shallow 2-quart casserole or baking dish (11 1/2 x 7 1/2 x 1 1/2 inches). In a small bowl, use a fork to toss the remaining 1 Tablespoon mustard with the bread crumbs. Scatter evenly over the top of the casserole. Bake 25 to 30 minutes or until bubbly and golden brown. Makes 8 appetizer servings.

have you ever tried the powdered cheese from Leahey? i use it for my mac n' cheese and love it

i usually just buy this bag of the powder, but they also sell mac n' cheese packets!
